Is there any specific reason why a chunk of the "PLURIBUS" is missing? Struck Through Grease?

This is common with CBHs. It isn't a Grease Filled Die. If you flip the coin over and look at the obverse, the weakness is on the opposite side of the thick part of the bust. There wasn't enough metal in the planchet to flow into that bulky area on the obverse and allow the devices on the reverse to be fully struck up. Just one of the many quirks with the CBH series.

PCGS called this AU55, also can anyone by any chance check the overton variety? PCGS called this o-128 but I think they are incorrect.

It does look like an O-128 to me.

Zurie, take a look at the position of the 13th star. O-128's 13th star points to the bottom of the curl, o-139 to the side of the curl. That is why I believe it is o-139.

Yes, you are correct! The reverses are virtually identical, but the obverse star 13 definitely looks like O-139. Yours also has the drawn out stars and the more prominent die clashes of O-139. Annoying to have it in a mislabeled holder.

This is the second time PCGS has incorrectly attributed a coin I have sent in, so I'm 2/2 . Is it worth it to have it properly attributed? o-139 is very hard to find in higher grades.

If they will reholder it without any cost to you (including shipping), I would probably send it back, mostly because it would always annoy me. Out of curiosity, did you note the Overton variety when you submitted it, or did you just trust them to get it right?

I did not note the variety mainly because I wasn't sure they'd take my word for it. For being such a large company I'd trust them to get it right and they've failed me twice already. I'll send it back probably.
