Has anyone used that ebay service where they sell your items for you for a percentage of the profit? Is that a wise way to sell coins?

DON'T DO IT! They know nothing about coins and will not describe or photograph it correctly. I once saw them sell 11 Ikes for $8, so the person who owns the coins got less that $6.
