Lovely horse head shots on the 100 & 50 Pesos Mexican examples ColonialCoinsUK! Here's the back of 500 Escudos (P-177) from Portugal. I realize this one's a bit of a stretch but there is 2 horses & a buggy if you look closely:  and the back of a 5 Litai from a Lithuania (horse is symbolic):  Plus an Irish £1 workhorse from a while back (featuring 2 workhorses of course):
