Came across some doubling today on a 2001 penny. Is this a legitimate double die? How does that happen with a single squeeze press?

This is Machine Doubling, not a doubled die. Note the irregular reduction in the size of the devices affected.

To answer your other question, single squeeze doubled dies tend to look kind of smeared when they appear on the devices (like the image was pressed into the sand and then moved while still applied), and tend to appear most frequently at the center of the design (e.g. doubled earlobes on obverses, center column doubling on LMC reverses, etc.)
