While I'm sure some of these are done to create an "error" to try and sell at a profit, I suspect a lot of time it's just people with time on their hands playing around.
I remember as a kid in the '60's, my brother and I occasionally goofed around with our grandpa's vise and metal-working tools messing with pennies to see what we could "create". This included pressing coins together like this, removing details using a wire or grinding wheel, and so on. It was all done out of curiosity with no intention to deceive anyone, and if the coins weren't too damaged they were later spent. Of course, grandpa would not have approved, so this was only done when he wasn't around
