I feel this set will be the one for type collectors to acquire a reverse proof. They will have a longer time period to make a purchase and the set is only two coins not 3 or 5. I will only buy one set to keep my collection complete.

Thats one of the things that makes me not as excited about this set in the sense that the mintage numbers could get real high when its said and done. I love the idea of the reverse proof sets, but to me it loses its specialness when they just make as many as people want to order. If they are going to do it that way Id much rather the RP just be sold as an individual coin

Was considering making a bit of a "volume" purchase on the soon-to-be released two coin proof set commemorating the 75th Anniversary of the new SFO Mint (Reverse Proof Nr.3). Anyone have thoughts on Mint pricing?

The mint is making this set simply "because they can". It is not meant to commemorate the 75th year of the SF mint.
