I looked through my collection and found many simplistic designs, but very few bare bones. I think this one can be considered bare bones China, Northern Song dynasty, Chongning Zhongbao 10 cash (1103-1105)  Translation: Chong Ning Zhong Bao That's Chongning (2nd era of Huizong, 1102-1106) / Heavy currency

I don't think this would qualify, the date and the arms are on the same side and the other side is blank... but it's probably the simplest I can think of offhand. Salzburg, zweier, 1517.

My most bare bones coin is this 1847 1 Fuang from Cambodia. They are a uniface coin, so nothing on the other side.
