I'm taking this question to mean coins that I have, not coins that I'd like to have. Based on that my three are:
1856 Flying Eagle (mine is an S-3 variety in MS-62) 1907 Augustus St. Gaudens' High Relief Double Eagle (mine is AU-50) 1793 Chain America Cent (mine is VG-10)

The sets I am working on are: Buffalo nickelsDraped Bust Cents / Half CentCapped Bust Dime / Half DimeAn honorable mention to 1882 Indian cents. If $ was no object, the 1882 3cent, quarter, half dollar, and Trade dollar are dreamed for. Draped Bust Dimes and Liberty Cap Cents are beautiful coins I would love to work on a set of.
