91-S is a proof coin - proof cents are always struck with squared rims and I'm guessing that would make them fuller plus not as much circulation wear as normal cents.
I have encountered many weak strike nickels. The slight curvature on the corner of the rims is really tiny. When you put them in a stack, they look far thinner than the coins around them.
Folks are right, the squared off rim of the impaired proof cent just visually appear far thicker than circulated normal cents. If you measured those coin rims with a caliper in the middle of the rim, they would probably be very close to the same thickness. It's just the corners of the edges that make it look thicker.
