The symbol X has long been shorthand for "EX". They have been used interchangeably in collecting since I was a kid, at least. Just an arbitrary decision, I think - nothing more than that.

When I'm selling a coin as extra fine, I will list it (Extra Fine EF XF !) That way I have both covered in the search results lol

Extra starts with an E, not an X.
Yup. Xtra starts with an X.

Not always.

For what it is worth I use EF in my spreadsheets except for my Franklin half dollars. I am not really certain why, but I think there was a good reason for doing so.

I suppose to make it clear, XF is short for Extra Fine but could mean Exactly Fine too. Whereas EF could also mean Estimated Fine, Established Fine or Especially Fine.
Now if we also used AF, then could also have Almost Fine, About Fine, Absolute Fine, etc.
So why not AXF for Almost Extra Fine? Or would someone think About Extra Fine?

I use XF only for 45/70 coins, I use EF for 35-40, and VF is used from 20-30

I've seen some ebay listings for BU coins that *must* mean "before uncirculated." Is BU an accepted alternative for AU, like EF/XF?

No. BU is "brilliant uncirculated" which is interchangeable only with non numerical MS

Also, if the coin is mint state and stained or just with horrible eye appeal it stands for... Butt Ugly

XF is both sexier and trendier than EF.

Super Bowl XXXIV
Xtra Gum
S, M, L and XL for extra large
Magic Mike XXL
etc. etc. etc.

Yes I am joking!

I am trying to train myself to XF and not EF. That seems to be the going trend.

I always assumed it was dependant on where the coin was graded...
