 I would also consider the proof three-coin 5-Star Generals set. The gold MacArthur priced me out of it, so I settled for the profiles collection (bronze MacArthur medal).

Yeah, that is a nice one for sure. I also think the U.S. Marshals gold one is really nice.

Now you are getting into the ones that I would get if I were stupid rich.  Sure, a lot are very nice, but the Kennedy and 5-Star are the only ones that made me wish gold was more affordable.

Jbuck: Sorry, NO.... hehehe.
So you like the Kennedy Gold and 5-stars General Gold coins because of the subject matter, right? From military perspective and artistic design, I think the Medal of Honors $5 Gold coin is on par (or better) than the 5-Stars General Gold. I have the former.

Correct. The Kennedy because I collect them and that gold will always be the missing hole in the set. The 5-Star mostly because of Eisenhower, but I admire the other Generals as well. As I have said previously, I have the Profiles Collection (two coin plus bronze medal uncirculated set), but the three coin proof set would have been a nice one to have. So, to this day, I still own no gold coins. If only we could have 10k gold coins to make for more affordable sets.

As of today, the U.S. Mint website makes no mention of a special 30th Anniversary American Eagle Proof Set to be released.  However, they are releasing a Centenial gold coin commemorating both the Mercury dime and the Walking Liberty half dollar that began their mintage run in 1916 and ending in 1945 and 1947, respectively.  Who knows, the mint might actually be able to keep a secret and could release a 30th Anniversary AE Proof Set with extravagant fanfare any day now followed by an intense PR campaign to bolster sales in an effort to eliminate the normal pre planned hoarding attempts by those looking to manipulate the market to set the "Un"Fair Market Value for this more than likely, very limited mintage proof set!  I'm just counting down the days until the end of February when they propose to release the 2016 proof set!
