My recommendation of the three is the Lincoln 1909-S VDB, as I believe there will always be more collectors putting together a series of Lincoln Cents than a series of Washington quarters or a series of ASE's.
I agree with this choice and the reasoning.

I have been following the 1909-s vdb since I started putting a collection together 20 or so years ago. The one good piece of advice my LCD gave me was that Lincolns may stay stagnant for awhile but usually don't drop in value (older wheats I am talking about). For me the VDB has risen in value since I first wanted to purchase one. I am not sure whether silver or copper is collected more but going to a few coin shows, I find there are way less wheats to choose from than silver. I am biased though , because I love the Lincolns. Let us know what you decided. I think John's advice is very good and totally agree with his order of purchase.

I bought my 1909s VDB 34 years ago for $800, now it should sell for $1000. With the value of the dollar now compared to 34 years ago, did this coin really increase in value?

I would not expect significant appreciation from any of these three coins in years to come.

Agreed , I had not considered inflation!. In future years the coin will cost more but not worth much more if you factor in
inflation. Since covid started coin prices on ebay seemed to have increased but are now trending downward. At least the coins I want to purchase. This is not a proven fact just a loose observation. I do not have hard facts to prove anything I just stated. Just thoughts.

My suggestion is to buy gold instead!
