I have a 1968 penny that has square edges instead of the bevel edge. Is this a proof coin?

No. Why? Because proof cents that year came from San Francisco and would have a 'S' mintmark. A shiny coin doesn't make it a proof coin. A proof coin is struck as a proof coin. It is a process of striking that creates a proof coin. Special dies are used and struck twice (or more on some denominations). So it's not a proof coin.

There are some examples of dies missing the mintmark that are proof coins, but as far as I know none for that year.

The square edge is most likely simply from an exceptionally good strike, or possibly a slightly overweight planchet. While fully squared off edges all the way around on a business strike are unusual, they are not unknown. A fully squared off edge on just part of the circumference is not unusual.
