I have a 42 d wheat I'm stumped on what exactly it is I have.The weight is 3.080 not the original 3.011 and is clearly out of tolerance allowed.That said I've checked weights of some of those with different planchets and even that seems to be off

we need pictures to help you. BUT a copper coin will weigh 3.11 grams not 3.011g, so your coin is well within specs.
It may also answer the questions you have on your other coins too.

3.11 grams with mint tolerance of .12 +/- grams is normal.

Did you calibrate or check scale after tare?

Weight = 3.11 grams
Tol. = +/- 0.13 grams

Thanks, Doug.
