Brand spankin' new, first day of issue GW dollars, are at a max of MS67 (according to my Google search) So, why no higher grades? Let me know if this is a dumb question because I am a newbie "an jest tryin' ta learn a bit."

I think the edge lettering process is nicking them up a bit.

The highest grade given so far by NGC is a ms-67 these things just do not look good, could be because it's new and having to put the date and mint mark on in the third step of minting them might be the reason.

with Bruce and will add that the GW is minted in such large numbers (300 million) so quickly that quality control may have suffered. It's also a bad design IMNSHO lending itself to downgrading. In the one roll of George's I bought, every single coin had scuff marks on it and would not have gone above MS-63. Fortunately, I bought the coins to spend.

Expect the same from the John Adams issue, at least the first strikes.

I will not be collecting these things, now if they have a proof Jefferson dollar then I might consider buying a few at least that's my take on them.

Why Jefferson instead of, say Adams or Madison or, one of my favorites, Andy Jackson?

I have been collecting Jefferson nickels for thirty years, Thomas Jefferson is one of my favorite presidents and I like anything with him on a coin I am silly that way.
