I just got an unopened roll of mint condition 2011-p pennies. In general are original rolls more desired or are the individual coin in protective cases more desired?

It really depends on the quality of whats in the roll. High grade individual coins are generally more desired, but the rolls do better than average quality ones would individually.

The catch 22 is you have to open the roll to find out if its a bank roll.

Lol, "Catch - 22" indeed. Hmmm.... to risk or not... I am a bit of gambler and also very curious by nature I have a feeling that roll is coming open.
