I'm trying to save up enough to buy the Jefferson First Spouse gold coin from the mint, when it is released.

Anyone who could help me with the following questions would be appreciated.

What date will the coins go on sale? What time of day? What is the cost per coin?

I don't think the mint has set a date yet. The price for the Jefferson is probably going to be the same as the Washington and Adams coins. They were both $429.95 for the proof and $410.95 for the Unc. They will most likely go on sale at 12:00 pm EST.

I would try to purchase them around 12:00 pm, since the first two sold out in 4 hours.

If you go to https://www.USMINT.GOV , and go under Product Availability, then click on Product Schedule 2007, it should eventually be posted on the list.
