My supervisor at work also works at a bank and got his hands on a roll of 1968 Quarters. He doesn't collect coins and wants to sell them.

Some coins have tarnish, some fingerprints on them but it's obvious they've been sitting in someone's collection for decades as they have a beautiful shine to them.

What's a fair price to pay him for this roll?

If it was an original bank roll it sounds like it isn't any more.
Are they all silver? If so fair price is $75, dealer would pay $70
If they are nickel $12-$15.
"Dipping" is not considered cleaning...

Are they silver? They made both nickel and %50 silver in 1968.

No they are not in a mint bank roll.

$75 for the roll if it is an open roll?

$75 if the roll consists of the "silver" version of the coin - the "nickel version" is worth $10-12 per DBM

Check them with a magnet. May be a mix of silver (nonmagnetic) and nickel (magnetic). A 1968 silver quarter when minted weighed 5.81g of 50% silver equalling an ASW (Actual Silver Weight) of 0.0934 troy oz.
