How difficult is it to find MS63 Peace dollars that have been undergraded? Has anyone here actively performed this search? Any good results or lessons learned?

Welcome to Coin Community, keaggy220. Since everyone's personal grading opinion is their own, we'll assume you're discussing slabbed coins. It's been my experience that Peace dollars are generally similar to Morgans in that regard - it's unlikely that you'll find a 63/64 which will confidently upgrade. Relatively few raw ones are joining the census compared to the last 20 years, and everyone is looking for slabs to crack. Most older slabs which might upgrade have been found. They're still out there, but you have to be sharp.

Not sure about under graded, but if you are patient in searching, possibly under priced, and a good deal or two can still be had.

If you are buying Peace dollars at MS-63 that you think will slab as MS-64 make sure you are getting a good buy at MS-63 money. Many of the dates have a substantial to huge jump from MS-63 to MS-64. One thing that the Big Three will be tough on is hairlines. Several of those and its an MS-63 tops. MS-64 also must have full mint bloom luster.

Seems like you would have to do that searching in person at shows and LCS. The normal picture leaves so much behind.

I could imagine some of the common date slabbed MS-63's are undergraded and could grade a point higher. The price difference between the 2 grades is not enough to justify the slabbing cost so even if undergraded, they will probably remain in the slab. Vast majority of those worth resubmitting probably have been already but if you have a good eye, you may be able to find one.
