The coins themselves should be not bought for any more than melt value +20% for Young Heads in EF, and not more than melt value +20% for Jubilee Heads and Veiled Heads in AU, in the numismatic aftermarket.
Use your own judgement for how much more you would pay for the encapsulation and presentation box.
If you include Australian minted sovereigns - Sydney Mint reverse, two extra head types to be included:
Young Head Sydney mint 1855 and 1856 similar, but not the same as Young Head (two year type), and
Second Type hairstyle, with Australian Banksia garland in hair 1857 to 1870 included.
I would suggest that they would be valued at around $U.S.1,250, in the current aftermarket.
The difference in The Royal Mint offer price and the calculated (by me) aftermarket price, represents marketing and distribution costs.
I used to have a complete Australian type set of sovereigns including an Adelaide Pound, 11 gold coins in all. Sold it many years ago, but my sold price for these not relevent here.
