Those are tough questions to answer generally. The first thing that comes to mind that may be subtle and universal is a lamination error. However, the more subtle it is, the less it may be worth.
A lot of valuable error types are "in your face", not subtle. For instance, broad-strikes, off-center, struck-through, die caps, etc.
Beyond that, much depends on what coin you are picking up. There are known varieties (not really errors) for specific coins to look for.

Very true. Pick a starting point, like one series. I don't know what you're interested in but, start there and learn as much as you can about it while dabbling in other things. Trying to be a generalist just won't work.
