I found this nickel a few months ago roll searching. I know its an error, but I'm having trouble classifying it. Is it an offcenter strike or a misaligned die, what is the difference between the two?

It's a misaligned die error. The obverse die was misaligned. A misaligned die error will be offset on one face while an off-center strike will be offset the same amount and direction on both faces.
Error coin writer and researcher.

IMO, that one would definitely be a keeper since some of the peripheral detail is missing. Extreme example of a MAD
