How is a 2000 $10 platinum eagle MS70 valued at around $700 by NGC and over $2000 by PCGS? Know PCGS coins command a lil' bit more, but this much of a pricing differential?

Neither NGC nor PCGS price guides are dependable. They are both very high for most coins, with some exceptions.
Use Heritage, Great Collections, of other major auction houses for real life sold prices. They have huge depth for almost any coin of any value.

Are these values from their respective price guides? I collect 30's through 60's MS66 PCGS/NGC wheat cents and usually find that PCGS price guide is double for what I can buy them for,

Who knows where they get them. Stick with auction results as suggested.

Their price guides may or may not be accurate depending on the individual listing, but yes there are times you can see a price gap like that or more with the PCGS ones

The are only two reasons I can think of for their generally high prices.
First would be the cut off for a budget coin charge and a higher charge for a "more valuable" coin. I really don't think this is true since the value entered on the submission form is done by the person submitting them.
Perhaps for purposes of advertising the value of the coins submitted each year?
I really can't think of a good reason. Both houses are well stocked with smart people. I just really can't see the reason to put prices out that are totally bogus.

I agree with all the general comments posted above but in this specific example there is a huge price differential between PCGS and NGC. The image below shows recent auction prices realized for 2000 $10 platinum eagles in MS70. The far right column is for MS70 pieces with PCGS prices on the top.

The others generally have a history which is where they got the prices from. The catch with it is just like greysheet and every other price guide they aren't always updated recently, just to much data to constantly be updating everyone

Serious collectors know the market and only use pop reports as a side reference.
