What would be a good price for a 1/2 sovereign proof 1911 Pr63 ?
And between this coin and an 1937 1/2 sovereign which one will you choose?

For the price question, I would say, the most recent price realized on similar coin in respectable auction House like Heritage Auction would give you a good idea of the true market value of that coin.
