One thing that most people don't realize though, especially with homeowners, is the problems caused by under insuring.

Absolutely true. Example is my neighbor who had his garage robbed. He thought his home owners insurance would cover everything. WRONG. His garage and a small percent of what is in it was covered but being a mechanic he had thousands of dollars worth of tools stolen. The insurance company asked for proof of the garage's contents. So who keeps all the receipts? He ended up with a few hundred dollars.
Another neighbor had his house cleaned out while on vacation. Again, the insurance company demanded proof of what was stolen or their estimate person would evaluate what he thought was a fair estimate. Naturally he lost a lot of money there.
On the Antique Road Show on TV the appraisers always recommend insuring for a lot higher than the actual value since insurance companies always try to low ball everyone.
