The difference is that the one with S was minted in San Francisco and the one without was minted in Philadelphia.

One was minted in San Francisco, the other was minted in Philadelphia. Not an error or variety, just normal mint marks. no mint mark means Philly on US coins, D is Denver, S is San Francisco, CC is Carson City, W is West Point, and O is New Orleans. The 1927 S is a somewhat scarce date, with only 14 million minted, while the 1927 Philly is just a common Wheat cent with a mintage of over 140 million.

Grade for grade, the San Francisco issue is worth more than the Philadelphia issue, especially at higher levels.
