Like for example, it's pretty obvious that Colorado mostly gets D minted stuff. But what about a state like Tennesee? Is there any specific "zoning" for coinage like there is for bills?

In Houston we get Denver mint.

In Minnesota normally Denver. Once in awhile only Philadelphia in a certain denomination.

I believe it has to do with the local banks and which federal reserve bank they belong to. I makes sense to me that most of the reserve banks are pretty much sourced from one mint or the other, but I would not be surprised if the ones in the middle have the option of using either mint depending on demand.

Tezro128, I also would be interested to see if there's a 'routine' for coin releases or just totally disorderly.

I'm in the Detroit area and expect to find mostly "P" coins, but sometimes it's just the opposite. I wish I had more data, but I do have a little feedback on my ATB Quarter searching.

2021: 0% "P's", 100% "D's"
2020: 60% "P's", 40% "D's"
2019: 79% "P's", 21% "D's"
2018: 52% "P's", 48% "D's"
2017: 51% "P's", 49% "D's"
2016: 48% "P's", 52% "D's"
2015: 50-50
2014: 58% "P's", 42% "D's"
2013: 55% "P's", 45% "D's"
2012: 70% "P's", 30% "D's"
2011: 61% "P's", 39% "D's"
2010: 75% "P's", 25% "D's"

I don't know if any of my data is helpful. The data is faulty. For instance, 2015 shows a 50-50 split, but that just means I have found all the "P's" and "D's" for my five sets, even though 80% of the coins I searched through might have been "P's".
Also, some yearly stats have their own differences (2017: can't find "P" DC's and can't find "D" IND, but it evens out). This year all I've found are "D's" in all quarters and cents; no "P's".

The Mints purposely sends coins to the places they think will confuse everyone.

Minnesota we get mostly Denver except for 2019 where we got a ton of 2019 p pennies and the 2019 p San Antonio missions quarters. I've only found one 2019 d San Antonio so far. Seen a fair amount of 2019 p nickels around too

it's based on east or west of the Mississippi River. For the most part Denver does West, Philly does East, but there is some overlap around the river areas and you could get either.
And Also, circumstances demand they cross over if demand is there and supply is low.

generally though, Denver supplies west of the Mississippi River and Philly supplies east of the Mississippi River, and this works for a logistical standpoint in most cases.

Yes in general Denver west of the Mississippi and Philadelphia east of it. There is some "overlap" which can be eplained by looking at ta map of the Federal Reserve Distribution areas.

Minnesota - usually D mint, although for the American Memorial Park some rolls were P mint and all the rolls of War in the Pacific I got were P mint. @ JohnH4444 shows some randomness - all my San Antonio are D mint.
