I am very new to coin collecting but ran across this rather weathered, beat up penny and it seems as if an I was punched instead of a T in liberty. Might I have you guys thoughts on this?

It is just damage. There is no way for an I to replace a T,
The devices are permanently engraved into the dies so
replacing a letter simply can't happen.

Yes there is, Keep looking, you will find your error coins. I myself never stop learning this hobby. I pick up something new almost every day.
