I just looked at the PCGS online coin price guide and some of the prices I saw amazed me. Are those prices that those coins are going for or is that what they would go for in a perfect world.

For example, I bought an 1899 S Double Eagle about 5 months ago in AU 58 condition. I paid 925.00 but the PCGS coin guide says 1575! Have they really gone up in value that much in under 5 months?

They tend to be high end prices but only for PCGS certified coins. And yes, the price for even generic Double Eagles has gone up dramatically in the past few months. With shortages of Gold Eagles and other world gold bullion, buyers have turned to Double Eagles for gold investment purposes pushing the prices up.

The $1575 quoted IS accurate for a PCGS encapsulated '99-S Double Eagle in AU58 condition. $1575 is also considered "high-end" retail price. Similar to MSRP on a new car. If you walk into a nice coin shop and they have an AU58 1899-S Double Eagle slabbed by PCGS, the $1575 asking price would not be a surprise.

Note many price guides are complete guesses. The PCGS web site's prices are inflated for a reason. This is how them make money you know. If you looked a coin on their web site and found it is worth a lot of money, you may send it to them for grading and slabbing. So naturally their prices are at least 20 to 25% overly done.
The Red Book's prices too are about 20 to 25% overly done since it is an annual book, their prices are only a guess as to what the prices may, might, could, would be in the future. Note the 2010 Red Book is now coming out. The prices for coins are what they might, could, should, possibly be in the year 2010. And then again, maybe not.
