Im able to buy some canadian large cents, typically late 1800's and early 1900's. The oldest I saw in the pile was 1888.
Which dates sould I be looking for?

Also some english large cents, same range of dates, what should I be looking for?

I'm going to be pedantic, because somebody usually is when a statement like this is made.

First, the coins are "British", not "English". Don't let a Scotsman catch you using those words interchangeably.

Second, Britain has never had "cents". They're "pennies" - they even say so right there on the coins. There were 240 of them to the pound, not 100. You can call them "large pennies" as opposed to the modern "small pennies", or you can call them "predecimal pennies" as opposed to the modern "decimal pennies".
