I was going through my modern commemorative silver dollars and looking at the one's I still need or want and was wondering what coin is considered the key coin? I have looked at mintage's and such and there are a few I would name but I can't narrow it down. Black patriots? Buffalo?

1995/6 Olympic High Jump, Paralympics, Tennis and Rowing in MS. They have the lowest mintages and the highest pricing.

Either one would be a key for the proofs, the buffalo is a particularly attractive coin. If you look at the BU coins The Olympic Paralympics, rowing, or high jump all seem to be of low mintage.
