I have a 'date' set of Morgans: for every year from 1878 to 1904 I have just the one coin, which is usually (but not always) the cheapest or commonest mintmark. They are in mixed grades from AG to MS, none are slabbed, and I don't have any extra variety coins such as the 1878 Tail Feathers. I have all three mints for 1921.

I collect by year rather than by series. I have every business strike from 1934-1964 with many of the major varieties.
I also have many full denomination sets back to the 1880's, including gold.
I have the 13 piece gold type set, plus a couple of classics.
I have at least one coin of every date from 1797-1964, including 1815 which is the toughest single year.
I am missing 2 from my classic silver commemorative set.
I am going on too long.

I first built a Morgan dollar Date Set, but found I had duplicates and multiple mintmarks of some date, so I built a full Morgan dollar Set.

Still working on many sets (Mercs, Buffs, LWH) and while I'm far from done with any of them yet, I'm taking the time to enjoy the one or two coins I get a month for them. Other than the 1922 no D (I consider it a mint error so don't include it) I have a complete au set of LWC w/o proofs. That was a fun and satisfying series to start with.

What is odd is no manufacturer has an Album with slots for the Mercury dime proofs. Most now have slots for the 42/41 and 42D/41 but nothing for the proofs. This means even if you have a completed Album of Mercury dimes, it is still not complete. Now with Lincoln cents, so many Albums and Folders have a place for the 55 Doubled and the 22 plain. Yet nothing for so many other Doubled Dies like the 69S. This type of system invented by Album manufacturers makes what is called a completed set meaningless.

For the purpose of this thread, "complete" is how you have defined it for your own set.

Yes, I wanted a complete set of early dollars ignoring the fact the 1758 were made in 1794 and there is a coin dated 1804, neither of which I will ever afford. So my set is complete.

The Indian cents many years ago, but I sold them. The Lincoln cents, but I have not kept up with them recently. The Twenty Cent Pieces, minus the 1876-CC, of course. The Type I gold dollars The Type II gold dollars The Classic Head $5 gold coins. And I have a complete type set of U.S. coins including all of the old commemorative coins.

I have several, but my favorite may not qualify as a "classic" set - Washington quarters. I have a complete set from 1932 through the current year in MS-64 for the three keys to Gem BU+ for the rest. This also includes a complete set of proof Washingtons from 1936 to the current day in PCGS PR-66 or higher. This proof set includes all known varieties which includes the two "Superbird" beauties. Lincolns (not exactly classic) and Indians. Working on Liberty nickels now. That set is a challenge in problem free XF+.
