how do you cut off everything but the coin.. in a circle I mean.

I used Photoshop and they have an eclipse outline tool that can be shaped around any oval/circle shape. It takes a little bit of practice, but the effect is pretty cool when it you "cut out" the coin just right. I actually just "discovered" this ability fairly recently. I now do it for all of my coin pictures.
