In terms of classic coins, I have an 1871 3CN at 604k original mintage.
Overall, the rarest is actually the W-proof and RP dime in my March of Dimes set, at 75k each.

With a mintage of 14,000, mintage wise, this is probably the scarcest coin in my collection.

A couple of mine that probably qualify as being fairly scarce... (1874 50c California Gold, AU58 BG930) (1798 Type 2 Hair Large Cent, F12) (1806 Bust Half, VF20) (1888 Lib Seated 10c, Proof 61, Struck Through Grease obverse)

It's been a while for me as far as US stuff is concerned, but the lowest I'd have to say was a 2008-W 1/10 Platinum Proof. That was the year the Mint stopped making them when the metals market went into freefall. The final mintage for that year was 5,138.

Sorry if this doesn't fit your criteria, but it is the rarest coin item I have - a cancelled coin die from the US mint. There are about 220 (of this one) in existence - rare in this condition, rarely one available to purchase, and very cool.

No pics included because the coins are wherever, but I guess words will have to do. Off the top of my head.. Cents: 1931 S Nickels: 1926 S (x2, paid $0.75 apiece) 3cent pieces (silver only, nickel versions are commons): 1862 3 cent piece, XF details holed and cut. A little over 343,000 minted off the top of my head. Dimes: 1861 S Seated dime with VG-F details, holed and maybe old cleaning too. Found in a junk silver dime box at the LCS years ago, paid something like $1.80 or so for it. Estimated pop is 250 in all grades. Mintage of only 172,500. Quarter: 1927 S SLQ in G-6 to VG-8. 1932 S Washington in G-VG. Half: 1919 Walking Liberty in F-VF, tough to find in higher grades. Dollar: 1903 S morgan Gold: Haha, you're funny.

The lowest mintage coin I think I own is the 1952S franklin, mintage 5,526,000. I probably have some lower mintage coins in my cull box, such as a 1970 2-1/2 lira coin from Turkey with mintage of 159,180 (lower than the '09-S VDB penny)

I have 1921-D LWH in VG condition. That is a coin hard to find in higher grades and hard to afford. The LWH is the first coin I ever collected just because I like the way they looked and how they felt. I had a jar of them and my cousin stole them.
