but would using Scotch Self-seal Laminating Pouches deveal and/or hurt the coin. Just thought it could be a nifty way to display coins with whats laying around

I think you need to find out what it is made from to see if it is coin safe.

Depend on what it is made of. And whether you would be alright with hurting the coins in question.

Unless the coin(s) in question have absolutely no value beyond face value, I would absolutely steer clear of these pouches for your coins! The adhesive material in the pouches will destroy any numismatic/collector value the coin(s) might have!
