A somewhat weird one-year-only coin (as far as issue for general circulation goes) is the 1998 bronze United Kingdom 2 pence piece.  The composition of the 1p and 2p coins changed from bronze to copper-clad steel in 1992, owing to an increase in the price of copper. Coins at that time bore the Raphael Makloif effigy of Queen Elizabeth II. In 1998 the new effigy by Ian Rank-Broadley was adopted, and that year around half the mintage of 2 pence coins was struck in the old bronze alloy, as used from 1971 to 1991. Maybe The Royal Mint found some bronze blanks and thought they might as well use them up...
