I like keeping all my 2006 and current Jeffersons together, since they share the same obverse design. That said, I am thinking to move around a few coins to accommodate the satin finish 2005 nickels, since I do have the business strike 2005 coins in both my 7113 and 8113 albums.

I haven't personally been inclined to look for varieties. I mostly just stick to business strikes and proofs. Interestingly enough, the Jefferson nickel series is really the only series that I collect the proofs. Got the 2018 reverse proof today.  Interesting coin. This first shot I tried to get, Jefferson was looking pretty ominous lol

I'm jealous.  When obtaining coins that are mint sets or proof sets, you can't just pick and choose, right? You can't say, purchase the denomination of nickels? It has to be all the currency, right?

Correct. From the Mint, these are sold is sets. There are a few exceptions, commemorative coins be the most common. The 1999-P SBA dollar is another that comes to mind. Sellers will break up the sets and sell individually, which is how you got the 2018-S RP nickel above.

Gotcha. I kinda figured that was the deal, but figured I'd ask. Would be cool if you could buy them directly from the Mint separately, though!

So, just for fun, here's a nice little recap of the collection.  My main set, which is now in two albums, and includes proofs. Some people prefer to do all UNC/BU, but I love the old, worn Jeffersons   65, 66 and 67 here are not SMS. Just circulated coins.    The unlabeled spots contain all the proofs from 1956-1970, including the SMS coins, and also the 81 type 2 proof.  New album, containing coins from 2006-2012-D here  2012-S through 2022-P  2022-D until current. I also tossed the satin finish 2005 on this page for now.  Well, that was a lot
