I know that the percentage is different, 80% silver in Canada vs 90% in America. But what about the price premiums, have you guys been able to see a significant different in prices per ozt between the two and is canadian as easy to sell as American junk?

For American .900s, the price is usually 10x above spot, which gives a buffer from directly affected from the spot silver price. As for .800 Canadians, at least in the US, they are calculated by their silver content.

And for even older .925 sterling Canadian coinage, the price is usually numismatic, meaning that those prices are always above spot.
