hi, I have this 1787 NJ copper and am curious if anyone out there might have a great knowledge of the varities. I don't have any books to identify it so with the little bit of internet search, I think it might be a maris 68-w variety, I am curious as if thats right. Any idea of a possible grade?

It has planchet flaws which were so common for these Colonial issues, as well as a slight OC strike. That would not take away from the grade. Your coin is IMO, a Maris 68-w variety (rare). It does have some corrosion on the reverse, but I would put your coin in the Fine category.
F12 Details/corroded. It is a nice Plow Copper despite the corrosion which is minor.

Yes, it is indeed 68-W....(R-4).... No idea on grade.

So I looked at the past Stacks auctions, there are 3 in the past yr. , the first 2 a fine 12 and a fine 15, curious if you think they match up to mine with the lack of detail in the horse on those? I guess I am trying to get an idea of where this coin falls in the value range too.

Here is probably the most recent sale of a Maris 68-W in similar condition to yours..... If you were spend the money to have it graded, I would imagine that it might be worth about the same.

Sorry, I forgot to mention the price it sold for (in case you are unable to log in to Heritage).... It was $109.25.... so without the auction house fees, I guess it was about ninety-something dollars.
