Any thoughts on what denomination "S" is. The closest I have come to this is possibly E. Schoenberg & Co, an oyster packer in Baltimore but the known tokens from them are not incuse and say E.S. & Co.

Google suggested that S might mean sack as in sack of oysters.

Incuse lettering that is not perfectly spaced suggest that it is a hand-made token. Perhaps E.S. & Co. made these initially themselves but then starting having them specially made.
Inordinately fascinated by bits of metal with strange markings and figures

Being from a former part of the British empire, I would naturally assume that a denomination-symbol "S" stands for "shilling". So your token might be British, or perhaps elsewhere in the former empire (Australia, New Zealand, South Africa, etc).
