i have a 1953 PCGS MS-64 Canada Strap silver dollar, what variety is this (SF or NSF)

SS is the same as SF. There is the NSS/NSF which is: no shoulder strap/no shoulder fold and the: SF/SS which is shoulder fold/shoulder strap.

Yours is a strap so it is a SS (shoulder strap) SF (shoulder fold) either term is correct
