Would such a set be difficult to assemble? I would want all Loonies with modified designs, such as the Owl from 2011, Teal from 2013, etc.

Not too difficult to assemble and they all can be found at reasonable prices if you are willing to wait. I have done so with the exception of the 2006 Snowy Owl and the 2010 Northern Harrier - still keeping an eye out for those at a lower price. Sometimes it is just as cheap to buy the whole specimen set as it is to buy the individual coin.

Buying the whole set is often cheaper then trying to buy the loon separately

If I buy the whole set with the loonie then I keep it in tact until the loon is ready to be shipped to ICCS

You can sell the rest of the set to help cover some of the costs. Personally, I would keep it intact though
