Yellowing shouldn't happen. At least not that quick anyway, and certainly not is those blister packs as shown here. There must be a problem with the packaging, or the way in which the coins are stored. Both need to be checked.
There must have been conditions the coin was in to cause yellowing to the plastic or the coin. Thanks for the input everyone, I'll be sending this one back to the seller ;)
