I cut around them as I remove them. If you take the 4 edges off you can separate the plastic but I divide it down further so they dont just spill everywhere. Once you remove the parts holding it together you can pull it apart, I leave extra space around the coin so theres some cardboard to work with and have the coins being held in the plastic removing the other piece. Once thats off you can just flip it over onto a piece of paper and if it doesn't fall out the plastic gives you an area you can apply force pushing it out without touching the actual coin.
