So I was going to put a little money back to buy a camera setup for coins....however I decided to get married instead...so that money turned in to ring money. So now I'm needing some expert advice based upon what I have available. I have my iPad air, a Nikon s8100 and an old Panasonic lumix dmc fz20. I have the ikea lights, of those 3 what would you consider to be the best option for coin photography. I've used all 3 with ok results but I believe I need to focus on using one and mastering it the best that I can. Thoughts?

IMHO the Nikon s8100 would be your best bet. It has a macro setting. If you do decide to upgrade second hand have a look at a micro 4 thirds or a sony nex... with adapters you can use second hand manual focus macro lenses ( of any make, just get the correct adapter) that way you can get great optics cheaply.
