I suspect collectors of Spanish coins from this period would know better than me--are the positions of letters/digits different on every die? If so, then the dies were made using individual punches for each letter/digit/design detail.
In such a case, doubling on the die would simply be a double-punched digit rather than a doubled die. And double-struck/re-engraved digits are common for this period, right? I have a couple on British coins which are dramatic because they involve one letter punched over another. In the case of this coin, I cannot see much to suggest a double-punched legend.
