Opened a bank roll of 68's to search through and found one penny to be significantly off color. What causes this?

This cent looks to have been plated at some point. Sometimes referred to as a "Science Project Cent" this is just one of a multitude of PMD you will find in your searches. Please post more, we love to see coins!

We made one of these (or at least one similar to it) in my AP Chemistry class. We plated pennies in Zinc, and then heated them over a Bunsen burner to turn the original copper-plating into brass.
