So Many Different Type Pre 1893 Sovereigns' Value Justified?

I'm wondering how much attention is paid by collectors for the many pre 1893 different type of gold sovereigns. Catalogue value can show huge differences in some cases like 1889M type1 unc $4500 vs. 1889M type 2 unc $475 in the 2009 McDonald book.
Obviously the rarer type will sell more, but is there any significant market out there to invest/collect these different types, JEB, LT,ST, BP ect. coins? Some cases like the 1880S 4 different version exist. I could be wrong, but can't imagine too many people collecting all of them.

I would, and do, pay more for certain varieties, but only up to the point I think they're worth.

Catalogues generally over-inflate values - there probably is a market, but I doubt whether they'd command premiums close to what McD's suggests (for most varieties that is).

When I looking some ebay sales some cases neither sellers nor buyers seems to realize they have the more expensive version. If such ignorance exist on the open market makes you wander if worth to pay extra premium from other sources or just look such ebay opportunities.

Its really only going to be the specialist collector who is going to collect the different varieties so I would think the market would be quite small.
Most people would be happy just to have the common variety sovereign for each year.

regarding varieties - aren't there plenty to choose from - for example -

1887 - three mints - L, S, & M
recto - YH & Jubilee
verso - St George, or CoA
- that's twelve varieties in one year !
