Are the Kookaburra's with privy marks considered to be of numismatic value - or are they viewed as more of a gimmick?

Is there a full list out there with all the Kookaburra privy coins and their mintage?

Being a Kookaburra collector, I have recently started purchasing the Lunar privy kooks and have found that the older ones (2012 dragon)have a premium already. Going further back, there are some key privy coins with super low mintages and would be great to have, at the right price. I do believe that they offer a numismatic value.

Some of them have lower mintages and do command a bit of a premium over spot at my LCS. Some of them are rather gimmicky. I have one that has a privy of the New Jersey State Quarter. It is low mintage, but it still feels hokey.

be patient, stalk ebay and go with a dealer who has a good reputation on ebay and you will find an auction in time with privy marks..

the auction setting will help you get a realistic price

It's nothing but marketing by the PM to try to sell more of the same. But I for one have collected all of them thus far. My main source has been APMEX and if you buy them when they are first released you get them for a reasonable premium.
I doubt they'll outperform the standard 1oz kooks in their performance, but it's a nice niche market and it's cheap to keep up.
