Do any coin catalogue have a listing for the gradual deterioration of the hoof in date.

There are about at least six different 'die chip in six' 1946 50ct configurations... However, the evolution of the well known 'Hoof through 6' is detailed in Charlton's 68th for 2014 in the Variety Section on Page 316.
